Our UCC SATLE project on generative AI integration continues to gain momentum across higher education institutions. In February 2025, we presented at the European University Association’s (EUA) Learning & Teaching Forum, UCC showcasing our research on AI adoption patterns among staff and identifying key implementation strategies.

Economics Case Study: Turning Disruption into Opportunity Our second-year economics module (EC2151) transforms AI tools into opportunities for developing critical graduate attributes and workplace skills. Students analyse economic development indicators while documenting their AI interactions through:
- Screenshots of research queries and follow-up questions.
- Critical reflection on AI-generated information (accuracy, limitations, biases).
- Comparative analysis with traditional research methods.
By allocating 10% of the assessment rubric to AI engagement, we make digital literacy explicit while demonstrating how AI can serve as a learning partner rather than a shortcut.
Theoretical Foundations & Impact: Our approach combines Bloom’s Digital Taxonomy, Metacognitive Learning Theory, and Authentic Assessment principles to create real-world tasks mirroring professional AI engagement. This interdisciplinary framework supports faculty development while preparing students for AI-enhanced professional environments.
